We once had a friend stay over (after a few beers the night before) and I made egg tacos in the morning. The friend asked, “how do you get so much flavor into eggs?”. Those particular eggs tacos only had cheese, cilantro, and hot sauce on them… so simple!

Asparagus Gruyere Quiche – With a Hash Brown Crust
Hash browns are definitely a weekend favorite of mine. Last Easter, I was looking for quiche recipes and came across one with a hash brown crust… perfect! Asparagus is one of the best spring veggies in my opinion, so that was a natural choice. And gruyere? Awesome in anything melt-y.
Chilaquiles – The Ultimate Mexican Breakfast
The first time I had chilaquiles was on vacation in Playa Del Carmen, Mexico; they were part of the breakfast buffet every morning. That dish was very basic – tortilla chips cooked in sauce. If you have never had them before, chilaquiles are like breakfast nachos (sounds delicious, right?) and we pronounce them (Cheel-ay-keel-ays).
