The first sausage and peppers sandwich I can remember having was only a couple of years ago – in Raleigh. There was a little Italian place we would go sometimes for lunch… the combination of spicy, tangy, and a hint of sweet is so delicious. The flavors work very naturally for a hearty pasta dish.
Bell peppers are very versatile and I often see local and/or organic ones at the store where I shop, so I buy them often and use them in salads, in eggs, as a snack, or whatever.
I usually buy a half-and-half mix of mild and spicy Italian sausages, but you can adjust the mix to the desired spice level.
You can crush the tomatoes yourself, but I don’t bother with that. I tried it once and it didn’t taste any better!
There is something very home-y about having a big pot of sauce simmering on the stove!
