Curry Meatballs with Avocado Cilantro Sauce

Nearly everyone likes meatballs. I was in search of a meatball that was different and did not involve any filler (breadcrumbs). I have been on a bit of a curry kick lately, which has yielded these delicious meatballs!

Chile Verde – Hearty & Warming for a cold winter’s day!

It is a cold, gloomy day here in NorCal today.  When the weather is blustery, my tummy wants soup, stew, or chile.  There is nothing more comforting than the delicious aroma of something warm and yummy cooking in the kitchen.

We have spent many winters in Bend, OR with my cousin and her family.  Mt. Bachelor is a wonderful ski resort and Bend has lots to do when you are not skiing/boarding.  My boys are not big chile lovers so I had never cooked Chile Verde for them. One cold night after a full day of skiing, my cousin made some, the house smelled amazing, the chile was delicious, and it immediately became a family favorite.

Gingerbread Molasses Cookies – Santa Will Love Them

These cookies are a tradition with our family – we bake at least one batch every Christmas. We have a large Christmas party (75-100 people) and there would be mutiny if we did not serve these cookies.

Andean Bean Stew – Meatless, yet Hearty

I had this Chilean-inspired stew on a cool evening at a little bay-front hotel restaurant in South San Francisco. I was going to wait until the weather cooled to make it at home, but then got impatient, and made it on a 100-degree day. It was still good!

Egg Tacos – Up Your Egg Game

We once had a friend stay over (after a few beers the night before) and I made egg tacos in the morning. The friend asked, “how do you get so much flavor into eggs?”. Those particular eggs tacos only had cheese, cilantro, and hot sauce on them… so simple!

Three Bean Salad – Easy Summer Side

This salad is super easy, fresh, and light. It is a great barbecue/picnic option if you don’t have a lot of time or cooking skill. You do need to plan ahead a bit though… it really is better after chilling a few hours with the dressing.

Cake Pops Two Ways

I got married last month… and made 150 cake pops for the wedding reception (in addition to purchased cupcakes). This might make me sound a bit crazy, but I thought paying $3 per cake pop was even crazier.

Baked Spinach Artichoke Dip – Perfect for Parties
